
Cuke- Tomato- Microgreen Salad
Fresh and satisfying!
A quick microgreen recipe to add some fresh vegetables to lunch or dinner. Easy to modify, this salad starts with the basics: fresh cucumbers (or Armenian cucumber), fresh tomatoes, and microgreens. Radish, Super Booster, Fennel, Alfalfa, Clover, Pea…choose the microgreen that goes with your favorite salad dressing. Or, mix in the microgreens and dispense with the dressing- this is a salad that is wonderful on its own. It can also be used in tacos, the base of a burrito bowl, or as a topping for tomato soup!
Make it your own
Make the microgreen salad your own by adding optional purslane, nuts or seeds, fresh herbs, and your favorite dressing. Top with edible flowers and you have a salad that is not only delicious and easy, but beautiful!

Cucumber Tomato Salad
Ingredients
- 1 cup Chopped cucumber
- 1 cup sliced and chopped tomatoes or halved cherry tomatoes
- 1/2 cup microgreens Any microgreen will work well!
- Cashews, sunflower seeds, or walnuts Optional
- 1/2 cup purslane Optional
- Edible flowers Optional
- 2 tbsp Salad dressing of choice Oil and vinigar, fruit based, or other favorite
Instructions
- Chop the tomatoes and cucumbers and mix gently together.
- Add microgreens and optional ingredients and mix gently
- Serve and drizzle salad dressing over to taste.
