High Protein Garlic Scape Pasta Sauce

This rich and creamy pasta sauce with cottage cheese, tomatoes, fresh garlic scapes, and microgreens has over 15 grams of protein per serving, and a boatload of micronutrients. A quick and easy vegetarian pasta, this is perfect for a healthy, high-protein lunch or dinner.

Garlic Scapes

Garlic scapes are the flower stalks of garlic, picked before they ripen into flowers. Removing the scapes funnels the garlic plants’ energy to making larger bulbs. They are available only in late spring to early summer, often at farmer’s markets. Garlic is an easy plant to grow, and I encourage you to plant some this fall! Garlic is planted before winter sets in, never in the spring like most crops.

Can you make this without garlic scapes?

Yes, you can substitute 2 large cloves of minced fresh garlic instead of the garlic scapes, making this delicious recipe available all year round.

How to…

Dice the onion and have all the ingredients ready. Then set the pot of water to boil while you make the sauce. This will ensure that the pasta and the sauce are ready at the same time.

High Protein Garlic Scape Pasta Sauce

A quick, high-protein, nutrient-rich pasta sauce
Prep Time 30 minutes

Ingredients
  

  • 1 tbsp olive oil
  • 1 diced onion
  • 1/2 cup finely diced garlic scapes, or two garlic cloves
  • 1 tsp Italian herbs
  • 1 can chopped tomatoes
  • 1 cup cottage cheese
  • 1/4 cup freshly grated Parmesan cheese Plus extra for serving
  • 1/2 cup Microgreens Radish, super booster, broccoli, or other variety
  • Salt and pepper
  • 1 lb short pasta such as shells or spiral

Instructions
 

  • Cook the pasta in salted water until al dente, or according to package directions. Save one cup of the cooking water before draining the pasta.
  • Saute the diced onion in the oil for 5 minutes or until just tender. Add the chopped garlic scapes and Italian seasoning and continue to saute for just one or two minutes until the garlic is soft.
  • Transfer the garlic mixture to a high-speed blender or food processor and add the tomatoes, cottage cheese, parmesan cheese, microgreens, and 1/4 cup of the reserved pasta cooking water. Puree the mixture. Add extra water if too thick.
  • Serve with drained pasta and fresh Parmesan cheese. Garnish with additional microgreens if desired.
