Carrots are naturally sweet, but add a little honey butter and a big handful of microgreens and they turn into a delicious nutrient-laden dish. Did you know that carrots are one of the vegetables that are more nutritious when they are cooked? (1)
Glazed Carrots with Broccoli Microgreens
A taste of honey
Ingredients
- 1 lb baby carrots
- 1 cup water
- 2 Tbsp. butter
- 3 Tbsp. honey
- 1/2 tsp. salt or more to taste
- 1/8 tsp. ground pepper
- 1 Tbsp. chopped broccoli microgreens
- 1 pinch ground ginger OR cinnamon OPTIONAL
Instructions
- Place the carrots in a large pan, add the water, and simmer for just 6-8 minutes until tender but not mushy.
- Drain the water from the pan, then put the pan with carrots back on the stove on medium heat and stir in the honey, butter, salt, and pepper (and ginger or cinnamon if using).
- Stir and cook for just 2 minutes, until the butter and honey have melted.
- Remove from heat and stir in the microgreens just before serving.
Make this vegan by substituting maple syrup and margarine for honey and butter.
