
PB&C Crunch Bars
A simple and delicious no-bake treat using crushed rice cakes, peanut butter, just the right amount of microgreens, and chocolate chips. These healthy, nutritious PB&C Crunch Bars are quick to prepare and only require a few ingredients. A fun and tasty cooking project for the littles!
PB&C Crunch Bars
Ingredients
- 6 plain rice cakes
- 1/2 cup creamy peanut butter, warmed
- 1/2 cup honey, warmed
- 1/2 cup microgreens, chopped fine
- 1 1/2 cup dark or semi-sweet chocolate chips
- 1 tsp coconut oil
Instructions
- Prepare the muffin tin: spray each well with just a bit of oil to keep the treats from sticking. Alternatively, put a paper muffin cup in each one and add a bit of spray to them.
- Prepare the bottom layer: In a large bowl, crush the rice cakes and mix in the finely chopped microgreens, warmed peanut butter and warmed honey. Stir until the mixture is well combined.
- Divide the mixture evenly in the muffin pan. Dip a glass cup in water, then press down firmly on each treat. Dip the glass again as needed.
- Prepare the Chocolate topping: In a small, microwave-safe bowl, microwave the chocolate and oil for one minute, stirring well every 15 seconds until the chocolate is melted and smooth. Don't over-heat or it will go hard.
- Spread the chocolate over the tops of the snacks.
- Place the muffin tin in the freezer for about 30 minutes, or until the treats are firm and the chocolate is solid
- Store any leftovers in the refrigerator or freezer.
