Wherever you use kale, spinach, or other leafy vegetables, you can substitute and cook with microgreens. Whenever possible, add the microgreens at the last minute to retain all of the nutrients. While cooking microgreens does reduce the nutrients somewhat, there are still plenty retained to make a difference not only in the flavor but in the vital nutrition microgreens provide.
