Cultivating Resilience: Microgreen Programs Support Youth, Families, and Community Wellness
I am Margo Clayson, the founder and managing director of The Mighty Microgreen.
My most important role, however, is educator. I have had opportunities to teach many students in public school, alternative schools/ homeschools, and other venues, about microgreens and the important role that nutrition plays in their future.
The students are consistently intrigued by microgreens.
During the hands-on class, they plant their own microgreens to take home while they learn the details of the ‘why’ of good nutrition. I teach them that knowledge equals the ability to make educated choices. My microgreen classes leave them excited to grow their own food and to experiment with what they have learned. Those with home gardens appreciate that there is no weeding involved.
A teacher in one of the schools requested that the local newspaper come in

On this particular day,
the students and I discussed the value of understanding nutrition and the role microgreens can play in a healthier, stronger life. We discussed science, choices, and personal responsibility.
Before I go into a school,
I collaborate with the teachers to include specific topics that each teacher deems important for their students. For some teachers, nutrition is their primary concern. Other teachers have requested that additional topics, such as bullying, entrepreneurship, sustainability, and others, be included in the 45-minute presentation. On this day, we talked about the role of hidden advertising in the students’ nutritional decisions, and the power of branding โnot only company branding, but the fact that they are ‘branding’ themselves both in person and online each day, with every conversation and action they take. Each student took time to consider who they wanted to be, and what their responsibilities are both to themselves and to their communities.
My hands-on classes are available
in person in SE Idaho, and through online presentations across the country. My mission is to change statistics, habits, and knowledge in those who need it the most.
I have worked with
schools, health departments, Rural Health initiatives, non-profit nutrition educators, as well as nutritionists, STEM advocates, corporate sponsors, libraries, and youth groups. As an experienced science-based teacher with a passion for communication, I am also available as a speaker.
