
Chocolate Mousse with Microgreens
Delicious- and FULL of phytonutrients
Full of protein!
Each serving has 10 grams of protein and many phytonutrients.
Do you have green-averse kids (or adults) in your home? This is an easy recipe to sneak in the greens.
Feel free to mix in your favorite add-ins, like mint, nuts, bananas and berries (Thank you, Alice, for that great idea)! Sugar free? Use powdered whole stevia (just 1/2 tsp).

Chocolate Mouse with Microgreens
Ingredients
- 6 oz tofu firm or soft
- 1/2 cup chopped sunflower or pea microgreens 1/2 oz
- 2 tsp unsweetened cocoa powder
- 4 oz chocolate chips or baking chocolate dark or milk
- 1/2 tsp pure vanilla extract
- 1 Tbsp milk of choice
- 1 large pinch salt
- 2 Tbsp sugar or sweetner of choice
Instructions
- Melt the chocolate in a microwave-safe container. Microwave and stir every 15 seconds until the chocolate is smooth and creamy.
- Put EVERYTHING in a small personal-size blender and blend until smooth.
- If you do not have a small blender it is recommended that you double the recipe.
- Eat now, or refrigerate for up to 3 days.


I love it! I added a few drops of mint in one batch and served it with a topping of salted cashews the second time. Both are excellent- and even my kids liked it!

Have you tried this with other microgreens? I only have access to a mix of kale and broccoli right now. Wonder if the taste would be off. TIA Also thanks for the “hidden” greens idea. My husband is not a fan of greens…
Kale and broccoli are fairly mild in flavor as microgreens, so they might be a great swap for the pea and sunflower! I have another chocolate mousse recipe using cottage cheese instead of tofu, and I have successfully used broccoli. Because broccoli and kale are smaller, more dense, than the larger microgreens, you might start with 1/4th cup instead of 1/2.
And, you are very welcome! One trick I have found: don’t let him see you put the greens in! The mind does strange things when it comes to taste- if he sees them, he might tend to ‘taste’ them even if the taste is not obvious. :)
