Chocolate Chia Pudding

This is for the chocolate lovers. It’s quick to put together and a guaranteed family-pleaser. This is also one of those microgreen recipes designed for the veggie-averse. Make it while no one is looking… the sunflower microgreens do not change the delicious flavor and you cannot see the microgreens once they are blended with the rest of the ingredients. This can be made with almost any milk, low-fat, non-fat, or whole; Nut or oat milk also works well. Coconut milk is a bit too strongly flavored.

Optional protein powder can also be used to up the protein content.

Serve the pudding in a bowl, or fill Pani with it.

Chocolate Chia Pudding

A nutritious snack or dessert that includes a boatload of hidden pytonutrients!
Prep Time 10 minutes
Refrigerated time 3 hours
Course Breakfast, Dessert
Servings 2

Ingredients
  

  • 1 cup milk of choice unsweetened
  • 1 large handful Sunflower microgreens
  • 2 tbsp cocoa powder (unsweetened)
  • 2 tbsp pure maple syrup
  • 1/4 cup chia seeds
  • 1 scoop protein powder (optional- I rarely use it)

Instructions
 

  • Mix everything except the chia seeds together in a blender until smooth.
  • Mix the chia seeds in with a spoon.
  • Refrigerate in a covered container for at least 2 hours, or overnight. Stir occasionally for the first hour to be sure the chia seeds do not clump
  • OPtional: Top with whipped cream, a sprinkle of granola, and a drizzle of pure maple syrup for a beautiful dessert
