No- bake Microgreen Granola Bars

Rolled oats, seeds, and nuts, perfectly balanced with the creamy richness of peanut butter and a drizzle of honey or maple syrup. But here’s where it gets exciting – tasty microgreens bring a huge phytonutrient twist to every bite. We suggest adding pea or sunflower microgreens, but other mild-tasting varieties will also work.

They’re perfect for breakfast on the run, an afternoon pick-me-up, or a guilt-free treat any time of the day.

Make it Vegan

To make this vegan, substitute maple syrup for the honey. The bars will not stick together as well, so use a sushi mold to press it together firmly. Alternatively, take a small handful and squeeze firmly.

No bake Microgreen Granola Bars

Ingredients
  

Dry Ingredients and Microgreens

  • 2 cup Instant rolled oats (organic)
  • 1/2 cup Sliced almonds
  • 1/2 cup Shredded coconut
  • 1/4 cup Raisins
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 2 tbsp Chia seed (optional)
  • 1 cup Chopped Microgreens (Pea and/or sunflower)

Wet Ingredients

  • 3/4 cup Peanut butter Smooth or Chunky
  • 1/2 cup Honey
  • 1 tsp Pure vanilla extract

Instructions
 

  •  Line an 8×8 pan with parchment paper
  • In a large mixing bowl, add the oatmeal, nuts, coconut, raisins, chopped microgreens, cinnamon, salt and optional chia seeds. Stir well so that all the ingredients are well combined.
  •  In a separate microwave-safe bowl, add the peanut butter, honey, and vanilla. Stir well with a heavy spoon and then microwave for 15 seconds to soften.
  • Combine the wet and dry ingredients thoroughly with a large spoon until the ingredients are ‘well acquainted’.
  • Place the mixture into the lined pan and spread it out evenly. Press it firmly into the pan using a glass, the back of a spoon, or your hand. The firmer you press it, the easier it will be to cut it.
  • Refrigerate for at least one hour to allow the mixture to cool and become firm.
  • Remove from the refrigerator and take the parchment paper (with the mixture) out of the pan to slice into 18 bars with a large, sharp knife. Slice into 6 strips one way, then turn the pan and cut each strip into thirds.
  • Eat immediately, or store in an airtight container for up to a week. They can also be wrapped individually in parchment paper or plastic wrap, and frozen in an airtight container for up to 3 months.

Notes

  1. You can use all pea microgreens, all sunflower, or a mixture of the two.
  2. When lining the pan with parchment paper, an easy way is to have two strips of 8-inch wide paper and crisscross them in the pan. This gives the best-looking edges.
  3. Feel free to substitute other nuts or seeds for the sliced almonds- pumpkin seeds, flax seeds, walnuts, pecans, etc.
  4. To use regular rolled oats, put 2 cups of regular rolled oats into a blender or food processor and grind for 15 seconds.
  5. To make VEGAN: replace the honey with ¼ cup of maple syrup. Be aware, however, that it may not stick together as well

    I made this with maple syrup too make it vegan. I added 1/2 tsp stevia to the peanut butter mixture to make it a little sweeter. Really Good!

  2. They are very delicious, I wanted to know what is the shelf life of these, I currently have them in the fridge because of the microgreens, can they be stored at room temperature?

    1. I am glad you like them! Because of the microgreens, it is best to store them in the refrigerator for up to 5 days. I would advise not storing at room temperature. I have also popped them into the freezer for longer storage (or to keep myself from eating the entire batch!).
