Peanut Butter Protein Fudge

High protein, zero guilt

I won’t lie- it’s best to keep these in the freezer so they are out of sight, out of mind! I was craving something sweet, and after reading the ingredients in store-bought protein bars, I decided to make my own high-protein option.

For those trying to increase their protein intake and love chocolate, these are helpful. With a peanut butter base, unsweetened cocoa powder, whey protein powder, sunflower microgreens, and honey, these taste like a rich fudge, but with much fewer calories and much more protein. They are also quick to put together- a win when you have a chocolate craving but don’t want to give in to junk food.

Gluten-Free

They are gluten-free and soft, so are best kept refrigerated. If you want to keep them out of the fridge or freezer without them becoming sticky, turn them into little balls instead of squares and roll them in a graham cracker crumb (regular or gluten-free).

I recommend using a ‘clean’ protein powder- no sweeteners, flavors, or additives. Use a natural peanut butter or almond butter if you prefer, without added oil or sugar.

Peanut Butter Protein Fudge

A quick, high-protein pick-me-up with added phyto-nutrients from microgreens to add to your daily routine

Ingredients
  

  • 1 cup chunky peanut butter
  • 1/4-1/2 cup honey
  • 1 cup protein powder
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt optional
  • 1/2 cup chopped sunflower microgreens Stick with sunflower for this recipe

Instructions
 

  • Warm the honey in the microwave until runny (about 15 seconds)
  • Mix the honey and peanut butter together with a spoon.
  • Add the rest of the ingredients and stir well.
  • Line a square 8 or 9 inch pan with two strips of parchment paper.
  • Spread the fudge into the pan and place the pan into the freezer to harden.
  • Remove from pan by lifting the parchment paper, cut into squares, and store in the fridge or freezer in a closed container.
